Programme Overview
The Master of Wine Science offers a unique opportunity to live, study, and work within a boutique winery environment. The programme integrates high-level scientific theory with practical winemaking, focusing on the chemistry, microbiology, and sensory evaluation of wine.
The first two semesters are based at the Goldwater Wine Science Centre on Waiheke Island, providing an immersive experience in one of New Zealand's premier wine regions. The final semester involves an independent research project, which can be conducted in collaboration with a commercial wine company, bridging the gap between academia and the global wine industry.
What You'll Study
The 180-point curriculum spans viticulture, fermentation science, and the business of wine.
Core Scientific Modules
- Viticulture: Soil science, vine management, and pest/disease control.
- Winemaking (Oenology): Fermentation biology and chemical analysis of wine.
- Sensory Evaluation: Training the palate to detect profiles, faults, and quality markers.
- Wine Chemistry & Microbiology: Detailed study of the biological processes that define wine character.
Business & Research
- Wine Business: Understanding global markets, export regulations, and boutique winery management.
- Research Project (60 points): A major supervised research project in the final semester. Recent student research has explored topics like nanotechnology in winemaking and consumer perception.
Why Choose This Programme?
- Boutique Winery Setting: Spend your first year studying on Waiheke Island, literally surrounded by the subject matter.
- Industry Collaboration: The final research project is often linked to real-world challenges faced by New Zealand wine producers.
- Comprehensive Skills: Graduates leave with both the lab-based scientific skills and the "boots-on-the-ground" practical knowledge of a vineyard.
- Career Network: Direct access to the Goldwater Wine Science Centre's connections within the New Zealand and international wine trade.
